Barszcz czerwony (red borscht) from Varchar's Recipes

Ingredients

- beetroot: 300 g - homemade bullion: 500 ml - dried mushrooms or champignons: 1 tsp - smoked bacon: 50 g - sausage (śląska): 2 - apple vinegar - sweet cream (optionally)

Instructions

1. Peel and grate beetroots. 2. Chop the bacon 3. Add beetroot, bullion, mushrooms and meat to the pot and boil for 30 minutes. 4. Add vinegar and (optionally) cream at your discretion. Serve with mashed potatoes.
