Ingredients
1 large can white hominy, rinsed and drained
2 limes
Cilantro (to taste)
1 sweet onion
1 can Rotel original tomatoes
2 boneless, skinless chicken breasts
Minced garlic
1-2 cans chicken broth (depending on how much broth you like)
Instructions
Chop the onion and finely chop the cilantro. Drain and rinse the hominy. Put the onion, cilantro (I start with a few pinches), hominy, tomatoes, garlic, and chicken in the crockpot; cover with chicken broth to your liking. Cook on high for 4 hours; remove and shred the chicken, then add it back in with a few squeezes of lime juice. Cook for another 30-45 minutes on high or another hour on low.
Serve garnished with lime juice, chopped cilantro, chopped onion, and sliced radish; you may also add a spoonful of sour cream.
