Ingredients
3 cups cooked quinoa
1 can black beans, drained and rinsed
1 1/2 cups fresh cilantro, chopped
3 medium carrots, julienned
4 green onions, thinly sliced
salt and pepper
dressing:
5 1/2 tablespoons fresh lime juice
4 tablespoons olive oil
2 large cloves garlic, minced
2 teaspoons ground cumin
3/4 teaspoon sea salt
Instructions
1. Chill cooked quinoa in fridge for 15 minutes.
2. In a large bowl, toss the quinoa, beans, cilantro, carrots, and green onions.
3. Whisk together the dressing.
4. Toss with salad.
