Creamy Crock Pot Vegan Tomato Basil Soup by
Ingredients
10-12 small - medium tomatoes (diced)
Fresh Basil leaves (approx. 10 leaves - more if you like)
1/4 tsp ground pepper
1 tbs butter
1 can tomato paste
1 tbs Italian Seasoning
* 2 c soy milk (or coconut or 2 c non-dairy creamer)
2 tbs of wheat flour
Instructions
1. Place tomatoes, basil, pepper into crock pot.
2. Whisk the milk and flour together. Pour over tomatoes into crockpot.
3. Cover and cook on low for 6 hours.
4. Blend until smooth.
5. Add butter, tomato paste, and italian seasoning. Blend together.
6. Return to crockpot and cook for about 1 hr.
