Ingredients

4 large Baking Potatoes peeled and cut into equal sized chunks 2 15 ounce cans, drained Butter Beans 1 cup Organic Vegetable Broth 1/2 cup Unsweetened, Plant Milk 2 tsp Fresh Ground Pepper

Instructions

Wash, peel and cut potatoes into large chunks. Place in a pot, and cover with water with a little salt. Bring to a boil. Reduce to medium-low and boil uncovered for 30 minutes or until potatoes are soft when pierced with a fork.
