Tomato Mozzarella Linguini by trublmkr

Ingredients

3 tbsp EVOO salt chile pepper finely chopped *optional 10 cherry tomatos Parsley mozzarella cheese parmesan cheese 3 cloves garlic pasta

Instructions

on low/medium heat, add evoo, salt, garlic, roughly cut parsley and tomatoes with 1/4 cup of water. cook for about 5 minutes. Cook pasta in separate pot while sauce is simmering after sauce cooks for 5 minutes, add pasta with 2 tbsp water and mix, add generous portion of mozzarella and mix in pan until cheese is melted remove from stove and to dinner plates; add a bit of parsley for presentation. Sprinkle with Parmesan
