Ingredients

175g sugar 175ml oil 3 large eggs 140g grated carrots lime zest 175g flour baking powder ginger

Instructions

Preheat the oven at 180°C. Butter and line a cake tin. In a bowl, mix: 175g sugar 175ml oil 3 large eggs 140g grated carrots lime zest 175g flour baking powder ginger Bake for 40-45 minutes. Leave to stand for 5 minutes. Place on cooling rack.
