Pasta with Sun Dried Tomato Pesto by M_Sheahan

Ingredients

12 oz Penne Pasta 1 8.5 oz jar of sun dried tomato packed in olive oil 2 garlic cloves salt and pepper 1 cup fresh basil leaves 1/2 cut grated parmesan

Instructions

Cook pasta about 8 minutes and reserve 1 cup of cooking water. Blend sun dried tomatoes, garlic, salt and pepper and basil in a blender. Transfer blended mixture to a bowl and stir in parmesan. Add pasta to pesto. Add reserved pasta cooking water as needed, season and serve.
