Potato and Veggie Packets - Grilled by M_Sheahan

Ingredients

1 lb of Petite Potatoes with Herbes de Provence Seasoning blend. 1 Zucchini cut into half moons. 1 Red bell pepper cored and diced. 1/2 Red Onion cut into half moons. 2 Tbs Olive Oil 1 Tbs butter. Salt

Instructions

Preheat grill to 400 degrees. Lay out 4 large sheets of foil about 20 inches long each. Halve the potatoes and place in a large bowl. Cut zucchini, bell peppers, onion and place in the bowl. Add seasoning and oil. Toss to combine. Place 1/4 of the mixture in the center of each foil packet. Place 1/2 Tbs of butter on each packet and add salt and pepper. Bring foil sided up to make a packet. Place packets on the grill away from the flame and cover. Grill about 30 minutes
