LC Chickpea Salad with Tuna by gweneris

Ingredients

1/4 c. Lemon juice 2 cloves garlic, minced 1/2 t. Cumin 2 cans 15 oz. Chickpeas, drained 4 green onions, sliced in 1 in. Pieces 1/2 c. Red pepper, chopped 1/2 c. Parsley, chopped 12 oz. Tuna in oil, drained 1/2 c. Feta

Instructions

Mix together lemon, garlic, cumin, 1/4 cup olive oil, 1/2 t. Salt, and 1/4 t. Pepper. Add chickpeas, onions, pepper, and parsley. Stir. Let stand at room temperature for 15 minutes. Fold in tuna, top with cheese, parsley, and pepper.
