LC Grilled Moroccan Beef Skewers with Yogurt Sauce by gweneris

Ingredients

6 T. Fresh Italian Parsley, chopped 4 cloves garlic, minced 2 lemons, zested and juiced 2 tsp. ground coriander 1 tsp. Paprika 1 lb. Sirloin cut into thin strips 1 pint Grape tomatoes 1 cup Plain Greek Yogurt Lavash or tortillas

Instructions

Marinade: Combine 4 T. parsley, garlic, 1.5 tsp. lemon zest, 1/4 cup lemon juice, 1/4 cup olive oil, coridander, paprika, and 1/2 tsp. salt and black pepper in large plastic bag. Add sirloin and toss to coat. Chill for 30 minutes. Drain and reserve marinade. Thread meat accordian style onto 8 skewers. Thread tomatoes onto 4 skewers. Grill beef on the rack of a covered grill over medium heat 6 to 8 minutes or until desired doneness. Add tomatoes the last 2 to 3 minutes, grilling until lightly charred, turning once. Place marinade in a small saucepan and heat to boiling. Yogurt sauce: Stir together yogurt, remaining parsley, 1/2 tsp. lemon zest, 2 T. lemon juice, and 1/4 tsp. salt and black pepper. Serve skewers with yogurt sauce and if desired over lavash or tortillas. Drizzle with hot marinade. Top with additional parsley. Serves 4 (2 meat skewers and 1 tomato skewer each)
