Cozonac by
Ingredients
Total Flour Needed: Approx 6 3/4 cups
Put 5 cups flour in bowl and make a crater in the middle
Put all of yeast mixture in middle and mix a little with flour. Leave to rise.
Yeast Mixture:
1/2 cup lukewarm plant milk (I like coconut milk because it gives it a sweetness)
6 1/2 tsp yeast
1 Tbl date paste
While the yeast is rising, prepare the following:
1 cup lukewarm plant milk
1/8 tsp salt
1 Flax Eggs (3Tbl water: 1T ground flax seed)
1/2 tsp lemon peel (peel from 1 lemon)
1 cup date paste
1 tsp vanilla
1/2 cup applesauce
1 Tbl white wine (optional)
Nut Mixture:
3 cups walnuts then ground fine
1/2 cup boiling plant milk
1 cup date paste
1 tsp vanilla
1/2 tsp imitation rum
1/2 tsp stevia powder
Mix together.
Instructions
Add lukewarm milk to flour mixture. Mix. Add salt. Mix. Add flax egg. Mix. Add lemon peel. Mix. Add date paste and vanilla. Mix. Add Applesauce. Mix. Add white wine. Mix.
Add rest of the flour (1 3/4 cup). May need to add more flour if you use date paste. Mix dough until smooth and elastic. Let rise. Punch down and let rise again in bowl till double in size. Divide into four equal parts. Roll out each dough to about an 8x10 square. Cover generously with nut mixture. Roll and pinch sides in. Put in parchment lined loaf pans. Brush top of loaves with milk. Let rise to 1" below top of pan. Preheat oven to 375. Bake for 45 min or until toothpick comes out clean. Convection bake at 350 for 30 minutes.
