Don't marinate too long. 2-4 hours is better. Pineapple juice is the secret ingredient!
Ingredients
Beef: skirt (preferably) or flank steak
Marinade:
1 cup pineaple juice (good stuff)
1/2 cup (or less) soy sauce
4 fresh squeezed limes
1/4 cup fresh cilantro
1 jalapeno
1/3 cup onions
1/3 cup water
Cumin
Salt
Pepper
Instructions
Combine in ziplock bag and marinate 2-4 hours.
Cook 2-3 minutes per side on hot grill. Let it rest for about 10 mins before cutting. Slice across the grain!
