Lemon Bars by

Ingredients
CRUST -
2 cups all purpose flour
1 cup confectioners' sugar, plus more for dusting
pinch of salt
1 stick butter - at room temp.
FILLING:
2 eggs
2 cups granulated sugar
6 Tablespoons all-purpose flour
6 Tablespoons fresh lemon juice ( I use a little more)
Instructions
PREHEAT OVEN - 350*
Lightly grease - 9 x 12" pan
Crust - combine flour confectioners sugar & salt in large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the prepared pan. May need to dip your fingers into a little flour or conf. sugar to keep the dough from sticking to your fingers.
Bake 15- 20 minutes.
FILLING -
Mix the eggs, sugar, flour, and lemon juice. Pour this over the "BAKED" crust and bake for 25 minutes longer. Sprinkle with confectioners sugar when bars are done.
