Champagne Cupcakes by agoldsm

Ingredients

1 pkg white cake mix 1 1/4 c. champagne or sparkling wine at room temp 1/3 c. vegetable oil 3 eggs 1/2 c. butter, softened 4 c. powdered sugar 1/4 c champagne 1 tsp. vanilla

Instructions

Heat oven to 350. Mix cake and 1 1/4 c, champagne. Add oil and eggs. Beat. Fill muffin cups and bake 15-20 min or until golden. Cool on wire racks. Beat butter, champagne and vanilla til smooth. Add powdered sugar one cup at a time while beating. Pipe frosting onto cooled cupcakes. I like to garnish with a strawberry slice.
