Shrimp and Avocado Appetizer by
Ingredients
1/4 cup reduced calorie mayonaise
1 tsp wasabi paste
1/2 tsp soy sauce
a large cucumber cut into 24 1/4 inch thick slices
24 small peeled cooked shrimp, peeled and deveined
1/2 avocado cut into 24 small pieces
Instructions
To make wasabi mayonnaise, in a small bowl, stir together mayonnaise, wasabi paste and soy sauce until smooth.
To assemble appetizers, place cucumber slices on a serving platter and spread each with 1/2 tsp if wasabi mayonnaise. Place a shrimp on top along with a piece of avocado.
