Potato Latkes by

Ingredients
3 med potatoes (650 g), peeled
1/3 c onion, sliced thin
3/4 c MixQuick
salt and pepper to taste
canola oil for frying
Instructions
Using a hand grater or food processor, coarsely grate the potato.
Place in a bowl and add the slice onion, MixQuick, salt and pepper. Toss well to combine and let the mixture sit for 5 minutes while moisture from the potatoes is released allowing the mixture to bind together.
Heat 1/8 inch of canola oil in a large non-stick skillet over med-high heat.
Drop level spoonfuls of potato mixture into the hot oil. Saute until golden brown on both sides, pressing them lightly with the spatula when you turn them. As they are cooked, drain on paper towels.
Serve immediately with applesauce.
