Ed’s Meat Loaf by Ed

Ingredients

1 1/2lb meatloaf mix (ground chuck & pork) 3/4 teaspoon salt 1/2 teaspoon ground black pepper 3/4 cup chopped onion 3/4 cup chopped bell pepper 2 egg, lightly beaten 12 ounces canned diced tomatoes (without juice) 1/2 cup bread crumbs Topping: 1/3 cup ketchup 2 tablespoons brown sugar 1 tablespoon prepared mustard 1 tablespoon Worcestershire sauce

Instructions

Preheat oven to 350 degrees F. Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf. Topping: Mix ingredients for topping and spread on top of loaf Bake for 1 hour 30 minutes. After baking let sit for 15 minutes. Serve.
