Gluten free sandwich bread by
Ingredients
Bread maker if you have one if not then a stand mixer with dough attachments
3 cups of gluten free pillsbury flour or gluten free flour of your choice. If flour doesn’t have xanathan gum then add 1 1/4 tsp xanathan gum to recipe
3 tbsp of sugar
2 tsp instant yeast if in bread maker 2 tsp of bread maker yeast. The yeasts are gluten free
1 1/4 tsp of salt
1 cup of warm milk
4 tbsp softened butter at room temp for 30 minutes
3 large eggs
Disposable 8 1/2 * 4 1/2 or 9*4*4 loaf pans or regular loaf pans
Butter to grease pans
Storage container for one loaf
Freezer bags to freeze other loaf
Metal cooling racks
Whisk
Serrated bread knife to cut bread
Instructions
If you are using a bread machine to make the dough add the wet ingredients, then dry and last add the yeast turn to dough setting . If you are using a stand mixer follow the steps below.
Place the flour, sugar,yeast,salt and if needed xanathan gum in your mixing bowl of your mixer whisk until incorporated.
Drizzle in the milk beating the whole time it will seem crumbly but once all of the milk is in it will come together.
Add the butter beat until blended
Beat in the eggs one at a time scraping the sides of the bowl. Then beat on high for three minutes for a thick smooth batter.
Cover the bowl with plastic wrap and a dish towel put in warm place let it rise for an hour.
Grease two disposable loaf pans 8 1/2 * 4 1/2 or 9*4*4 or regular loaf pans
Scoop dough into pans level with wet hands or a spatula cover with plastic wrap let rise 45 to 60 minutes or until the
Dough reaches the crown of the pan.
Towards the end of the rising cycle preheat oven to 350 f or 175 c
Bake 38-42 minutes or until golden brown
Let bread cool ten minutes in bread pan transfer to cooling rack cool for 45 minutes before cutting.
