Grilled asparagus is also wonderful sprinkled with parsley and served on a bed of arugula wit h the basil aioli drizzled over it.
Ingredients
2 lbs. asparagus, tough ends removed
3/4 lb. thinly sliced proscuitto
3 tbls. best quality aged balsamic vinegar
Cracked black pepper
wooden skewers, soaked at least 30 minutes in water
Instructions
Wrapped two asparagus spears with proscuitto, continuing until all the spears are wrapped. Skewer two to three bundles together. Brush with balsamic and sprinkle with pepper. Grill about three minutes per side.
