This is a nice change from regular coleslaw. Great with cold ham platter for a summertime supper. By Aroostook
Ingredients
2 c shredded cabbage
1 c pineapple chunk, chopped and drained
1 c chopped celery
1/2 c sweet red pepper, chopped
1/2 c heavy cream (whipped until stiff)
3 tbs vinegar
1/4 tsp salt
1/8 tsp pepper
Instructions
1. Toss together cabbage, pineapple, celery and sweet pepper.
2. Sprinkle with salt and pepper and toss.
3. Add vinegar to whipped cream and stir well.
4. Combine with cabbage mixture and chill.
