Ingredients
2 tbs margarine or butter
1 1/2 lbs red potatoes, quartered
1/2 c. leek, sliced
1/4 c red bell pepper, chopped
2-4 tbs parmesan cheese, grated
Instructions
1. Place margarine in 2-qt microwave safe casserole.
2. Microwave on HIGH for 30 - 40 seconds until melted.
3. Add potatoes, leeks, and red peppers, toss to coat.
4. Cover tightly.
5. Microwave on HIGH for 6 to 8 minutes until potatoes are tender, stirring once halfway through cooking.
6. Sprinkle with parmesan cheese.
