Ingredients
2 large onions, diced
4 stalks celery, chopped
4 lbs potatoes, diced
1 tbs dried dill weed
2 tbs olive oil
vegetable broth to cover (or beef)
add baby carrots (optional)
Instructions
1. Combine the onions, celery, potatoes, and dill weed in a slow cooker; drizzle the olive oil over the mixture.
2. Pour the vegetable broth into the slow cooker.
3. Cook on high until vegetables are tender, about 6 hrs.
