Notes

This is my favorite salsa fresca recipe. It's vegetarian, low fat, low calorie, and very tasty. We always make it with tabascos if we are growing tabasco peppers, but the tabasco plants are a bit hard to find. They can be ordered online - https://bonnieplants.com/product/tabasco-hot-pepper/

Ingredients

2 Roma tomatos, quartered 1/2 medium onion, quartered 1 bunch fresh cilantro, rinsed & chopped 3 fresh Tabasco peppers (or substitute other hot pepper of your choice) 1 can Del Monte Stewed tomatoes - Mexican Recipe 1 small can v8 vegetable juice (optional)

Instructions

Place onions, peppers and cilantro in food processor and process until onions are chopped. Add tomatos; process until coarsely chopped. Add canned tomatos; process until blended. Add v8; process. Serve immediately. Sauce will keep up to a week in the refrigerater; stir well before serving.
