Cook at least one whole chicken breast per person. (When sliced it doesn’t really make a lot.)
Serve with moms salsa!
Ingredients
2 chicken breasts, sliced into fajita strips
1/4 cup olive oil
juice of one lime
Smoked paprika
Cumin
Garlic
Chili powder
Salt
Pepper
1/2 onion, sliced
2 bell peppers, sliced
Olive oil for sautéing
Flour tortillas
Cheddar cheese
Greek yogurt or sour cream
Chopped lettuce
Instructions
Marinate chicken in olive oil/lime/paprika/cumin/garlic.
Heat skillet on medium high. When skillet is hot, add chicken and cook, about 1 minute per side.
Remove chicken from heat and either clean skillet or use a different skillet to sauté onions and peppers in olive oil until softened.
Place some cheese on tortilla and microwave until melted, about 30 seconds on power 7. Add chicken, peppers, yogurt or sour cream (optional), lettuce and whatever other toppings you like.
