Ham and Rice Casserole from Kira's Recipes

Notes

This is easy and quick to make in a large skillet. Beef broth really makes for a good flavor. Original recipe uses seasoned rice, but long grain rice works fine too. The Uncle Ben's seasoning is *very salty*, so go easy on that. (Actually the whole recipe is pretty salty. I use a reduced sodium beef broth.)

Ingredients

1 box Uncle Ben's seasoned rice - rice + 2tsp of the seasoning, (or to taste) garlic powder (to taste - a pinch is good) onion powder (to taste - a pinch is good) 1/2 onion, chopped 2 tbsp olive oil 1 sm can mushrooms, chopped 1 sm pkg frozen green beans, rinsed and thawed 2 cups reduced sodium beef broth soup 2 cups cooked ham, diced

Instructions

Heat 2 tbsp olive oil in a large skillet. Sautee rice, diced onion and mushrooms in oil until rice is slightly browned and onion is cooked; stir often. Add broth, seasoning and green beans; cook over medium heat until rice is cooked and liquid is absorbed (about 10 minutes). Add ham at the end, when there's just a little liquid left; cook another minute. Serve with garlic toast or corn muffins.
