3/4 cup sugar 1/2 teas. cinnamon 1/4 teas. salt 1 teas. lemon rind 2 tbls. flour or cornstarch 6 cups tart apples, peeled and sliced

Mix dry ingredients together. Arrange apples in pastry lined pie pan. Sprinkle dry mixture over apples. Dot with butter. Place a crust on top and brush with milk. Bake at 400 for 10 minutes and THEN reduce to 375 for 40 minutes.
