Ingredients
5 medium sweet potatoes
1/2 c cranberry relish
1/2 cup dried cranberries, chopped
2 tbsp butter
1/2 t salt
1/2 walnut pieces
Instructions
Preheat oven to 325. Pierce potatoes. Bake for 1 1/4 to 1 1/2 hours.
Cut in half, scoop out flesh leaving 1/4 inch shell. Mash flesh. Stir in cranberries, relish, butter and salt. Spoon mash back into shells. Place in baking pan, cover and chill up to 24 hours.
Remove from fridge, uncover and sprinkle with walnuts, Bake in 350 oven for 30 minutes.
