healthy oven roasted chicken with crispy skin from Cupboardraider's Recipes

this is a great easy healthy dish. It tastes great as is and doesn't require huge amounts of seasoning. It goes will with almost any side though I recommend something like rice with beans and vegetables. I have a recipe on here labeled "Rice with beans and vegetables".

Ingredients

- 1 chicken breast or thigh per person. - preferably with skin but you can use regular skinless chicken breasts as well. - butter - Jane's Mixed up Krazy Salt or other herb mix - cookie sheet covered in tinfoil - non-stick pan for crisping skin

Instructions

- pre-heat oven to 400 degrees - lightly coat each breast or thigh in olive oil and then rub in the Krazy salt or herb mixture. - place on a tinfoil covered cooking sheet and then place in oven. - after 15 minutes pull out and cut open the largest breast to see if it is cooked through, if it isn't place back in oven for 5 minutes and repeat the process till fully cooked. - once cooked place pan over high heat and melt just enough butter to cover the area of the pan that the chicken will occupy. - for one breast this is a small area and only requires a small amount of butter. - place breast skin side down to crisp the skin. - takes about 2 minutes depending on how hot your pan gets. - if desired flip and lightly crisp/brown the top as well.
