Ingredients
2 c coconut
1/3 c butter, melted
1 small package vanilla pudding (not instant)
1/2 c heavy cream, whipped
1 1/2 c miniature marshmallows
2 bananas, sliced
1 3/4 c milk
Whipped cream if desired
Instructions
Combine coconut and butter in skillet. Cook over low heat, stirring frequently until golden brown. Press into a 9" pie pan and up sides. Chill. Prepare pudding using 1 3/4 c milk. Cover with waxed paper and chill. Fold in whipped cream and add marshmallows. Slice bananas onto crust and pour filling over bananas. Chill. If desired, top with additional whipped cream when serving.
