½ cup dried cherries or cranberries or chopped apricots
½ cup crystallized ginger coarsely chopped
½ - ¾ cup roasted, shelled pistachios or other nuts
2 cups bittersweet or dark chocolate chips

Instructions:
Line a rimmed baking sheet with parchment or wax paper.
Place mini baking cups on the baking tray.
Melt the chocolate in a double boiler over barely simmering water, stirring occasionally until smooth. Or melt the chocolate in the microwave.
Take the chocolate off the stove and add the other ingredients and stir until mixed.
Drop one teaspoonful of the mixture in each baking cups.
Chill in the fridge or freezer until firm, about an hour.
Store in an airtight container in the fridge or freezer.
