Ingredients
Any veggies you want to clean out from the frig:
EVOO
bell pepper (any color)
onion
corn
asparagus
broccoli
carrots
celery
spinach
1 can black beans
1 c quick cooking brown rice (with water as directed on package)
1 can refrigerated biscuits
shredded cheese
1 taco seasoning
Instructions
Spray 13x9 baking dish. Preheat oven to 350 or 375 (per biscuit directions).
Chop all vegetables and lightly saute in a large skillet. Add beans water, rice, taco seasoning and cook as directed until water has been evaporated. Cool slightly.
Meanwhile, press biscuits onto bottom of baking dish. Pour vegetable mixture on top of biscuits and top with cheese. Bake 15-20 minutes until biscuits have cooked thoroughly and cheese is slightly browned and bubbly.
