Notes
If using bamboo skewers, soak in water for 1 hr before threading shrimp.
Can add cuo uo peppers, onions, zucchini, etc to skewers and thread with shrimp.
Ingredients
1/4 c EVOO
2 tsp minced oregano
2 tsp minced parsley
1 tsp minced garlic
1 tsp lemon zest
1/2 tsp crushed red pepper
1/2 t salt
1/2 tsp fresh ground pepper
1 lb jumbo or colossal shrimp, peeled and deveined
lemon wedges for garnish
Instructions
Mix together evoo, oregano, parsley, garlic, lemon zest, crushed red pepper flakes, salt and pepper. Toss the shrimp in evoo mixture. Cover and refrigerate 1 hr.
Thread shrimp on skewers and grill over med- high heat. Grill 2 min on each side.
Serve with lemon wedges.
