I've also used ingredients I have in the frig or freezer - frozen peas, endamame, chopped brocolli florettes...Have also spooned into a low carb tortilla as a wrap. This is excellent and very healthy!

Ingredients

1 15oz can black beans, rinsed and drained 1 c frozen organic corn 12 cherry or grape tomatoes, halved 1/2 c schoped scallions 2 cloved garlic, pressed 1/2 c diced red pepper 1/4 c chopped cilantro 2 T EVOO 3 T freshly squeezed lime jiuce 1/4 t ground cumin

Instructions

Mix all ingredients and let marinate a few hours before serving.
