Ingredients
1 1/2 c water
1 c long grain rice
1/2 t kosher salt
1/2 c sliced dried apricots
2 t grated lemon zest
1/2 c toasted sliced almonds
Instructions
In med saucepan, combine rice, water and salt. Bring to a boil. Stir once, heat to low, cover, and simmer until water is absorbed and rice is tender, about 18 min. Sprinkle with apricots and lemon zest. Fluff with fork and fold in almonds before serving. Serves 6.
