Ingredients
1 1/2 lb fresh brocolli flowerettes, sliced thinly
2/3 c minced onion
4 eggs, well beaten
1 1/4 c milk
1 t salt
dash pepper
few drops of hot pepper sauce
1 T fresh minced parsley
1/8 t nutmeg
2/3 c shredded swiss cheese
1/3 c parmesan cheese
Instructions
Preheat oven to 350. Butter an 10" pie plate. Place brocolli and onion in saucepan with 2 T water. Cover and cook over med-low heat for 4-5 minutes; drain. Combine eggs, milk, s&p, hot pepper sauce, nutmeg, swiss cheese; stir in vegetables. Turn into prepared pie plate. Sprinkle with parmesan cheese. Bake for 30-35 minutes until set and browned. Let cool 10 minutes before serving.
