Very good - especially warm! If you like coconut macaroons -
you will love this.
Ingredients
4 lg. egg whites
1 1/2 cups shredded coconut
2/3 cup sugar
1/2 cup flour
1/2 tsp. vanilla ( I use a little more)
1/4 tsp salt
1 stick of unsalted butter, melted
Instructions
Whisk egg whites until smooth and a little foamy;
then add the remaining ingredients one by one.
Be especially light handed when stirring in the butter
and flour. Mix well -
line cup cake pan with liners - scoop mixture into cupcake
liners - bake 350* for 20 min.
Makes 15 muffins.
