Veggie lasagne from Aemelliott's Recipes

Ingredients

1 butternut squash - 3/4 grated, 1/4 thinly sliced 1 courgette - grated 2 red peppers (long) - chopped small some mushrooms - chopped small 1 onion - chopped small 1 clove garlic 1tsp herbes de Provence 1 tin chopped tomatoes lasagne leaves Beschemel: milk flour grated cheese

Instructions

Cook veg Add tinned tomatoes and herbs Cook beschemel (or use slices of cheese) Layer: veg, butternut, pasta, beschemel, veg, butternut, pasta, beschemel Grate cheese on top Cook at 180 C for 40 mins
