This recipe was from Peggy Mouton. Kenny saw me fixing butterbeans and said he wished I'd fix 'em like Mrs. Mouton. I asked him how she cooked hers and he didn't know, but he sure did like 'em. I called and asked for her recipe. She just laughed and said she didn't have one, but did tell me what she put in 'em. And he was right...they were DELICIOUS!

Ingredients

2 strips of bacon small diced onion can of diced tomatoes can of water 16 oz. pkg. of frozen butter beans salt and pepper

Instructions

Cut bacon into pieces and brown in pot over medium heat. Remove bacon and add a small diced onion to the fat in the pot. Cook and stir a couple of minutes, then add diced tomatoes and a can of water. Add a 16 oz. pkg. of frozen butter beans and stir. Season with salt and pepper to taste. Bring to a boil, cover and turn heat to low. Simmer for about 20 minutes.
