Zucchini Bread from Trobinson's Recipes

Ingredients

3 eggs 1 cup of brown sugar, packed 1 cup granulated sugar 1 cup vegetable oil 2 cups grated zucchini 1 teaspoon vanilla 1 cup chopped nuts 3 cups all purpose flour 1/2 teaspoon cinnamon 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt

Instructions

1. Heat oven to 325. 2. Beat eggs until frothy. Stir in sugars, oil, zucchini and vanilla. 3. Combine dry ingredients; stir into zucchini mixture until well mixed. Stir in nuts. Bake for 1 hour. Cool 10 minutes in pan; remove to wire rack. Cool thoroughly before slicing. Makes 2 loaves.
