Skinny Chef's Salad from Trobinson's Recipes

Makes 4 servings

Ingredients

4 large hard-boiled eggs, peeled 9 oz sweet butter lettuce mix 4 oz ham, diced 12 oz thickly sliced turkey breast, cut into wide strips 1 cup shredded reduced-fat cheddar cheese 1 cup grape tomatoes, sliced in half 1 small cucumber, halved lengthwise and sliced into 1/4-inch thick half-moons Salt and freshly ground black pepper

Instructions

Cut the hard-boiled eggs in half; remove and discard the yolks. Dice the egg whites. Divide the lettuce among 4 large dinner plates. Top with the sliced egg whites, ham, turkey, cheese, tomatoes, and cucumber. Season with salt and pepper to taste. Drizzle the dressing on top and serve.
