Makes 20 servings
Ingredients
3 large egg whites
4 large ripe bananas
½ cup crushed pineapple (freshly crushed in blender)
½ cup applesauce
¼ cup Natvia
1 ½ cup plain flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
In a large mixing bowl mash up bananas. Add in pineapple, applesauce, Natvia, flour, baking powder, baking soda, vanilla extract and mix to combine
In a separate bowl beat egg whites till stiff peaks form. Fold in egg whites into banana mixture. Pour into cupcake tin and bake at 170 degrees celcius for 18 minutes.
