Carrot Cake Pancakes from Sweeterlifeclub's Recipes

Ingredients

Pancakes: 80g banana 1 tablespoons coconut flour 1/4 teaspoon baking powder 2 teaspoon Natvia 1 egg 1/2 grated carrot cinnamon nutmeg 4 chopped walnuts Topping: 100g Greek yoghurt 1 tablespoons Natvia 1/2 teaspoon lemon juice

Instructions

In a small bowl mash banana until smooth and creamy. Add coconut flour, baking powder, egg and Natvia. Stir to combine well. Then mix through carrot, cinnamon, nutmeg and walnuts. Place a spoonful of mixture into a hot fry pan and cook as you would normal pancakes. Continue this process until all mixture is cooked. (makes approximately 5 small pancakes). Whilst pancakes are cooling, In a small bowl prepare the topping by combining Greek yoghurt, Natvia and lemon juice. (tip: If yoghurt is too thick add a teaspoon at a time of water to thin). Layer pancake and topping mixture. If desired top with extra grated carrot.
