Ingredients

4 eggs 1 cup of Flour 2 cups of milk ( Homo) 1 tsp salt lard

Instructions

Mix the wet ingredients and add the dry a bit at a time, whisking constantly, you will still have some lumps, no problem. Mix well. Spray the muffin tin with Pam then put a small amount of melted fat in each ( about a quarter of a teaspoon ) in each cup. I use the silicone cupcake cups for easy removal. Heat the oven to 400 deg. and heat the pan till hot, then remove for filling. Use a little pastry brush to make sure that each cup is well coated. Using 1/3 cup measuring cup, divide the mixture into the 12 cups, should come to about 1/2" from the top, and bake in top part of oven for 45 minutes at 400. Consider a baking pan on lower rack to shield radiant heat from lower element. Do not under-bake, even though it might look like they are done, leave them for the full 45 minutes. Can make these ahead, freeze them, and then put on a cookie sheet and warm for about 10 minutes just before serving. Consider a baking pan on lower rack to shield radiant heat from lower element.
