Baked Turkey Sausage and Potatoes from Phoenix's Recipes

Ingredients

Smoked Turkey Sausage 1.5 - 2lbs. (or any type of lowfat link sausage) red potatoes 6 cups of 1in chunks Bell peppers(red &grn) 2 cut to 1in chunks (or 2pkgs of mixed) Onion, Large(yellow) 1 thinly sliced Garlic cloves, fresh 2 minced (or dried minced) Chicken broth, low fat reduced sodium 1/4 cup Extra virgin olive oil 1 tbsp (good quality) Rosemary leaves,crushed dried 1tsp Thyme 1tsp Creole seasoning 1/2 tsp or to taste

Instructions

1. Cut sausage and set aside. 2. Place potatoes in med sauce pan and cover with water. Bring to a boil; reduce heat and simmer for 10 min or until tender. Preheat oven to 400 F. 3. Drain potatoes. In a large bowl combine sausage, bell peppers, onion, potatoes, garlic, olive oil, broth, and herbs.Mix and place in a 12x8 baking dish. Sprinkle seasoning over the top. 4. Place in oven and bake for 30 minutes or until potatoes are lightly browned. For crispy potatoes bake 10-15 min longer.
