If you like chicken corn chowder, follow this recipe with the addition of 2 small skinless boneless chicken breasts. Boil the chicken and shred it, then boil the potatoes in the chicken water. Add everything else as usual.
You can also add bacon or ham to this recipe, just make sure it's cooked first.
Any other vegetable you have on hand like peppers are good to add. It's a fun recipe to play with.
Ingredients
5 potatoes - peeled and cubed
2 small chopped onions
3 stalks celery - chopped
1 can corn - undrained
1 can cream corn
1 12oz can evaporated milk
2 tbsp margarine
1 cup chopped carrots
2 cubes chicken bouillon
1 tsp flour
chili pepper to taste
salt and pepper to taste
Instructions
Boil potatoes for 10 minutes, mash slightly.
Add potatoes and everything but the evaporated milk and spices to crock pot and add water to nearly cover vegetables.
Cook 6 hours on low.
Add spices.
Cook another 2.5 hours on low.
Add evaporated milk.
Cook another .5 hours on low.
Serve
