Cheese blintz casserole from Marth's Recipes

Makes 6 servings

Ingredients

Filling: 1 lb. cream cheese at room temp 1 lb. small curd cottage cheese 2 beaten eggs 1 cup sugar Pinch of salt 2 tbsp lemon juice Batter: 2 sticks melted margarine 1/2 cup sugar 2 beaten eggs 1 cup flour 3 tsp baking powder Pinch salt 1/4 cup milk 1 tsp vanilla

Instructions

Preheat oven at 300 degrees. Filling: Cream cheeses together. Add remaining ingredients and mix well. Set aside. Batter: Mix all ingredients. Grease a 9" x 13" pan. Spread 1/2 the batter in the bottom of pan. Cover with entire filling mixture. Plop remaining batter on top and slightly mix around the top with a knife. Bake for 45 to 60 minutes until golden brown and set.
