Campsite Chicken Packets from Lolo's Recipes

Makes 4 servings

Ingredients

1 can chicken broth 1 cup rice (basmati) 3 T. Butter 1 clove garlic, minced 1/2 tsp. Parisienne seasoning or Italian seasoning 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. Greek seasoning 1 fryer chicken, cut up 1 onion, chopped 1 zucchini, diced OR Onion, green pepper, tomato OR Whatever veggies you like

Instructions

Cook rice in broth. Melt butter w/ seasonings. Brush on chicken. Place 2 pieces of chicken, skin side down, on 4 large pieces of foil. Combine rice with onion and spoon over chicken. Top with your choice of vegetable. Drizzle with remaining butter. Form a loose packet. Place on med. grill for 35-40 minutes. Serve.
