Broccoli with Bacon from Kraus's Recipes

Ingredients

1 medium bunch broccoli (about 1 lb.) 1 small onion, cut in rings 1/4 lb. bacon 1/4 t. salt 1/4 t. sugar 1/4 t. oil 1/2 c. raw cashews (optional)

Instructions

Slice bacon into small pieces and fry. Drain and set aside. Cut broccoli into bite-size pieces. Bring 7 cups water, salt and sugar to boil and blanch broccoli 20 seconds. Rinse in cold water. Sauté onion, add broccoli, bacon and cashews and stir fry about 20 seconds.
