Roasted Sweet Potatoes with Honey and Cinnamon from Gerri's Recipes

Ingredients

4 sweet potatoes, peeled and cut into 1-inch cubes 1/4 C extra-virgin olive oil, plus more for drizzling over potatoes after cooked 1/4 C honey 2 tsp ground cinnamon salt and pepper

Instructions

Preheat oven to 375 Lay sweet potatoes out in single layer on a roasting tray. Drizzle oil, honey, and cinnamon, salt, and pepper over potatoes. Roast for 25-30 minutes in oven or until tender Remove from oven and transfer to serving dish. Drizzle with more olive oil if desired
